What the PDO label entails for Feta:
Origin
It is produced exclusively in specific regions of Greece; the Peloponnese, Central Greece, Thessaly, Epirus, Macedonia, Thrace, and the prefecture of Lesvos.
Raw materials
It is made exclusively from sheep milk or a mixture of sheep and goat milk, in a ratio of at least 70% sheep milk and up to 30% goat milk.
The milk used comes from breeds of sheep and goats traditionally reared in the particular regions, grazing on the local flora.
Production Proces
Feta contains a minimum of 43% fat in dry matter and a maximum moisture content of 55%.
No milk powder or milk protein, milk concentrate, caseinates, coloring agents, or preservatives are allowed to be added to the milk used for cheese-making.
Maturation
Feta is aged exclusively in wooden barrels or tin containers for at least two months. This process enhances its flavour and helps preserve it.
